A while ago I subscribed to Creative Cooks Kitchen recipe books, where they send you a few recipe cards at a time until you fill up your book. I have three full books with hundreds of recipes, but I probably have only tried 15. Don’t ask me why. They are very good. Anyway, tonight I fixed a dish from one of the books and thought I would share it.
Taco Chicken Fingers
- 1 pkg. fresh chicken tenderloins or 1 lb. skinless, boneless chicken breasts, sliced into strips
- 1 cup Miracle Whip
- 1 packet taco seasoning mix
- 1 bag of tortilla chips, crushed
- 1 gallon size zip-lock bag
- Salsa of your choice
Mix together the crushed chips and the taco seasoning mix in the zip-lock bag. This will be the “breading” for the chicken. Take each strip of chicken and brush it with mayo until it is covered and drop into the bag with the chip mixture. Shake until the chicken is covered. Do this with each chicken strip.
Place strips in baking dish and bake at 425 degrees for 25 minutes. Use your favorite type of salsa for the dipping sauce.
This is a very quick and easy dish that you can serve at parties or take to the office and is also loved by children.
